Pasta salad with shrimps and arugula

Tasty, healthy and summer friendly salad. What do you need more. Perfect on a hot summer day or a moment you’re alone at home(of course you’ve to change the amount of the ingredients then). This is a recipe of my own so unfortunately I don’t have a picture.

You’ll need:

♥ 150 arugula
♥ 250 g small Main shrimps (already cooked)
♥ 350 g mini penne
♥  20 g pine nuts
♥ 125 ml crème fraîche
♥ 2 tbsp olive oil
♥ 1 tbsp fresh lemon juice
♥ 1 tsp Italian herbs
♥ 50 g kernel corn

Let’s get started:

Cook the pasta according to package. Rinse in a colander under cold running water and drain.
Cut all the arugula leaves in two pieces, in order to make eating easier.
Mix the oil and arugula through the pasta. Add the shrimps. Grind some pepper and sprinkle with the pine nuts and kernel corns.
Stir in Italian herbs and fresh lemon juice through the crème fraîche and serve with the salad.

Tip: top it with basil leaves
